Cookies for breakfast? doesn’t sound too bad, right? these chewy, mildly sweet banana oatmeal cookies are the perfect make-ahead breakfast for your whole family. we often complain about not having enough time in the morning to make a nutritious meal, cookies like these are such a great fix.

Why do I love these breakfast cookies?

–>Easy to make with simple and readily available ingredients.

    –>comes together in 30 minutes.

    –>no refined flours and sugars.

–>ideal for meal-prep and make ahead type of meals

–>highly customizable with your favourite healthy ingredients

    Key Ingredients

ingredients photo showing bananas, oats, honey, egg, chocolate chips, cinnamon

banana oatmeal breakfast cookies are highly customisable but these are the key ingredients I added in my version here.

Ripe Bananas – the riper the bananas are the better, so if you have those sadly looking over-ripened bananas sitting on your tables, they are just perfect!

Oats – old-fashioned rolled oats, quick oats all work better!

Honey – used a natural sweetener, can totally skip if your bananas are ripe enough.

Egg – acts as a natural binding agent and adds protein as well.

Chocolate chips – chocolate makes everything better!

Groud Cinnamon – adds a great tasty punch to cookies.

You can also add any kind of nut butter, chia seeds, almond flakes, dry fruits to customise the cookies, adding a bit of protein powder to make them more protein-rich..

We all know weight loss happens when you consume fewer calories than you spend. Since it is not possible to eat very little all the time, we have to choose healthy and filling ingredients that keep us full for a longer time while keeping the calorie less wherever possible.

Step 5: Add chocolate chips, oats to the banana and egg mixture.

Step 6: Combine well using a spatula. if you notice the cookie mixture is very runny, add a spoon full of oats until you feel the mixture is good enough to roll into balls. If it’s the other way around, add a little bit of melted coconut oil or peanut butter.

Step 7: Using your palm, take a spoonful mixture and start rolling into medium lemon sized balls.

Step 8: Place on a lined baking tray and press gently to form a cookie shape. Bake them in a pre-heated oven for exactly 12 minutes and not more than that at 180 degrees celsius.

Allow them to cool down and serve with a spoon full of extra peanut butter.

    How to store banana cookies?

To store, place them in an airtight container and keep them in the fridge, I wouldn’t leave them on the countertop because of the fresh fruit we used. also since it doesn’t have any flour, they attract more mould due to extra moisture present.

simply leave on the countertop for an hour before serving or warm them for 15 seconds in a microwave oven.

To freeze, place them in freezer-friendly bags and freeze for up to 3 months. thaw them on the countertop or microwave for 30 seconds before serving.

Yes, you can, just add 2 tablespoons of extra peanut butter to bind the ingredients well. or use a vegan egg using chia seeds.
