Banana Oatmeal Breakfast Cookies

Very quick and healthy banana oatmeal breakfast cookies you can have for breakfast or a post-workout meal

Ingredients
  

  • 2 Bananas ripen,medium
  • 1 ¼ Cup Oats rolled or quick
  • 1 egg medium
  • 1 tbsp honey
  • 2 tbsp Chocolate Chips
  • a pinch of cinnamon

Instructions
 

  • Pre-heat the oven to its maximum temperature for atleast 15 minutes
  • In a mixing bowl, place the peeped ripened bananas.
  • Using a fork, mash the ripened bananas well.
  • Add the other ingredients like egg, honey, peanut butter(if using), ground cinnamon.
  • Using a fork again, mix all the ingredients well until well combined.
  • Add chocolate chips, oats to the banana and egg mixture.
  • Combine well using a spatula. if you notice the cookie mixture is very runny, add a spoon full of oats until you feel the mixture is good enough to roll into balls. If it’s the other way around, add a little bit of melted coconut oil or peanut butter.
  • Using your clean hands, take a spoonful mixture and start rolling into medium lemon sized balls.
  • Place on a lined baking tray and press gently to form a cookie shape. Bake them in a pre-heated oven for exactly 12 minutes and not more than that at 180 degrees celsius.
  • Allow them to cool down for atleast 30 minutes and serve with a spoon full of extra peanut butter.

Notes

  • Use ripe bananas wherever possible that can allow you to skip the honey as an additional sweetener.
  • Try to add in mixed chopped nuts like almonds, walnuts etc, also chia seeds are a great addition.
  • add a spoon of extra oats to make the mixture if runny or melted coconut oil or peanut butter if the mixture is very dry.
  • Adding coconut oil, honey is totally optional. either uses honey or peanut butter
  • Baking times differ according to oven temperatures however the average time is not more than 15 minutes.
  • If you notice the chocolate chips are getting burnt, cover them with a silver foil in the last few minutes.
  • To store, place them in an airtight container and keep them in the fridge, I wouldn’t leave them on the countertop because of the fresh fruit we used. also since it doesn’t have any flour, they attract more mould due to extra moisture present.
  • To freeze, place them in freezer-friendly bags and freeze for up to 3 months. thaw them on the countertop or microwave for 30 seconds before serving.
