Presenting you my version of the low-fat roasted garlic tomato pasta, my friends! We are ready for this weight loss game, yaassss!
My low-fat roasted garlic tomato pasta is a winner! So quick to make and refreshing oozing noodles slow-cooked/simmered in a nice roasted garlic tomato sauce and then topped with your favourite cheese, nope, we are not leaving it behind. Rather, we measure such good fats and maintain portion control. that’s it, you got to be convinced or else make it straight away and prove me wrong.
If you are one to eliminate carbs from you diet, re-think, coz, carbohydrates are the essential nutritional bombs that provide energy to your body to perform our daily tasks. Sure you would lose weight fast if you eliminate them but how long can you sustain like that? Won’t the weight be bounced back quickly when you feed your deprived body with more carbs again? We apply one golden rule here – cook carbohydrates with fewer fats and make it work well for your weight loss, simple!
Preparing for a marathon? Or working out in gym? You need this in your active life as it provides tons of good energy to refuel your body after a heavy workout. We are eating veggies carbs, fats in a balanced way.
Ingredients for low-fat roasted garlic tomato pasta
- Pasta I used whole durum wheat spaghetti here but feel free to swap for penne or any other kind you like.
- Garlic, a few cloves sliced or chopped roughly coz we are going to grind them anyways
- Tomatoes, I picked the big vine ones again chopped roughly
- Low-calorie cooking spray, my favourite is frylight but where are tons of varieties available in the market. This is the most important in my weight loo cooking pantry. saves you tons of calories. Usually, I buy in supermarkets in deals but check it out here
- Italian herbs Choose any good quality herbs
- Salt, pepper, the staples
- Cheddar Cheese, am never going to sacrifice this, never!
How to make roasted garlic tomato pasta
- Cook pasta according to the packet instruction but by using cooking spray or even better without any fat(it’s manageable!), drain them and keep aside.
- In a heated pan, spray cooking oil and roast garlic until brown, then add in tomatoes and roast on low flame for good 15 -20 minutes or until liquid evaporates. Alternatively, you could roast them in the pre-heated oven too.
- Cool the mixture and blend into a sauce consistency, I like to keep the sauce a bit chunky but if you prefer can blend it smooth.
- In the same pan used above, spray oil and pour the sauce and cook it for 10 minutes or so adding in salt, pepper and Italian mixed herbs.
- Slowly cook the cause until the liquid thickens and add in pasta to mix well, Adust the spices and simmer for 5 more minutes.
- Finish it off with a measured 20 to 30 grams cheese depending upon your daily quota. Most slimming plans recommend you to eat 30 to 45 grams of cheese as a healthy calcium supplement.
Can I batch cook and freeze roasted garlic tomato pasta?
This stays good in fridge for at least 3 days. Definitely, this is the most time saving, calorie and a money-saving tip. I would skip adding cheese to it if freezing.
When needed either bring it t room temperature naturally by leaving on the countertop or defrost it in MW and then add cheese just before serving.
It will be a perfect weekday lunch and you could save some in the office fridge as well for those easy dek lunches on busy days.
How to serve low-fat roasted garlic tomato pasta?
This classic pasta is such a crow pleasing meal and no need to worry too much about the sides. But if you want some extra protein and nutrients
- Add some protein like chicken or spiced tofu or any vegetable curry.
- Top it with some Classic Italian garden salad, use some crunchy lettuce or extra veggies like cherry tomatoes, cucumbers and bell peppers.
- And some pine nuts too. But I would be careful while adding any nuts as I usually measure them in my daily quota.

Creamy low-fat roasted garlic tomato pasta, simple to make and ideal for post-workout meals. Can be easily batch cooked for your busy days to avoid eating outside.
Ingredients
300g dried Spaghetti
3 big Tomatoes chopped
2–3 garlic cloves roughly chopped
low-calorie cooking spray
1 pinch salt,
1 tsp ground pepper,
1 tbsp Italian mixed herbs
1 pinch chilli flakes
30 g cheddar cheese

- Cook pasta according to the packet instruction but by using cooking spray or even better without any fat(it’s manageable!), drain them and keep aside.
- In a heated pan, spray cooking oil and roast garlic until brown, then add in tomatoes and roast on low flame for good 15 -20 minutes or until liquid evaporates.

- Sprinkle chilli flakes and garnish with fresh basil.
- Finish it off with a measured 20 to 30 grams cheese depending upon your daily quota. I would prefer to do it on individual portions depending upon the choice.
- Serve with any optional sides like spiced tofu or extra protein f your choice.
Notes
Alternatively, you could roast the veggies ahead of time in the preheated oven for 10 minutes. Keeping roasted veggies ready in the fridge will be very handy.
