Ingredients
Scale
- 60g old fashioned oats
- 1 medium banana
- 1/3 cup unsweetened almond milk
- 1 Scoop or 25g chocolate protein powder
- 1 tablespoon unsweetened cocoa powder
- 1/2 tablespoon white vinegar
- 1/2 teaspoon baking powder
- A pinch of cinnamon
- Strawberries and banana for toppings
Instructions
- Add milk , white vinegar, oats, protein powder, cocoa powder, baking powder, bananas to a blender. Blend on low for 30-45 seconds until oats are ground and bananas are fully smashed and the batter turns smooth. Adjust with hot water if required.
- Preheat griddle or skillet to medium heat and spray with non-stick cooking spray.
- Drop ladle full of batter onto the preheated pan and cook until bubbles begin to form and edges are just setting with a covered lid. This typically takes 5 minutes
- Flip and cook through, about 2 minutes. Usually, yields 4 to 5 pancakes
- Serve immediately topped with fresh bananas and strawberries and some syrup if desired. I sprinkled some sweetener.
Notes
The pancakes are very smooth so handle them carefully while flipping. Allow them to cook properly so you can flip easily without deforming their shape.
White vinegar is optional and it makes the pancakes fluffy.
You can substitute the almond milk with any low-fat dairy milk too. also protein powder with additional cocoa powder.
Instead of milk, you can also use an egg for additional protein.
